Baked Herbed Rice

3 Tbsp buter or olive oil
1 small onion chopped
1 c long grain rice
2 c hot chicken, beef or veggie broth
2 Tbsp chopped fresh chives or 2 tsp dried
1 Tbsp chopped fresh tarragon or 1 tsp dried
salt and greshly ground pepperRecipe
Heat the butter in a saute pan and saute the onion until tender but not brown, about 5 minutes. Add the rice and stir to coat the rice well. Add the remaining ingerdients, cover tightly and bake in a preheated 375 oven for 25 minutes. Serves 4-6.
