Ham Salad

List of Ingredients
2 cups cooked ham, cut bite-sized
half a medium onion, diced
1 stalk celery, sliced thin
1/2 green or sweet red pepper, diced
1/4 cup cooked green peas (canned okay, no need
to heat) (optional)
1 tablespoon grated fresh ginger
1/8 cup chopped or snipped fresh dill
scant 1/2 cup mayonnaise (light mayo okay but not
fat-free and do not sub Miracle Whip or salad dressing)
1/4 cup pitted green olives (stuffed or not, cook s choice),
chopped
salt and pepper to taste
Pimiento or pepper rings for garnish (optional)
Recipe
Mix all ingredients together and allow to sit in fridge a minimum of
an hour before serving. It will look too gloppy when you first
prepare it. Don t despair - it will be fine after an hour. Garnish
with pimiento or pepper rings if you wish. Serves 4-6.
