Potato Cheese Dill Soup

List of Ingredients
4 T. butter or margarine
2 cups peeled and chopped carrots
2 cups finely chopped onion
6 parsley sprigs
5-6 cups chicken broth
4 cups peeled and chopped potatoes
1 cup chopped fresh dill
3 cups grated cheddar cheese
Recipe
Melt butter in black iron pot; add onion and carrots and saute until
tender. Add parsley sprigs, broth, and potatoes; bring to the boil,
then
cover and simmer until tender (about 30 minutes). Remove from heat and
add
dill. Let stand, covered, 5 minutes or so. Puree in blender. Stir in
cheese and add salt and pepper to taste.
You can adjust the quantities of all ingredients--this is soup. You
can
also add 1-2 cups of milk or half and half or canned milk when you add
the
cheese, to make it go a little further.
