Chicken with Prunes and Almonds

List of Ingredients
- 1 orange
- 125mls fresh orange juice
- 125mls dry sherry
- 85g pitted prunes
- 2tbs blanched almonds
- 1tsp ground cinnamon
- 600g chicken thigh fillets, trimmed
- salt and ground black pepper
- 1tbs chopped fresh parsley
- Couscous (to serve), prepared following directions
Instructions
- Peel the rind from the orange using a vegetable peeler.Remove any white pith from the rind and then cut the rind into long thin strips.
- Combine orange rind, orange juice, sherry, prunes, almonds and cinnamon in a large saucepan. Bring to the boil, rduce heat to medium and boil for 5-8 minutes or until reduced by 1/3.
- Add the chicken thigh fillets and simmer over low heat for 10 minutes or until chicken is just tender. Season to taste with salt and pepper.
- Serve sprinkled with the parsley and accompanied by couscous.
