    List of Ingredients




    8 ounces extra-lean ground sirloin beef or turkey breast
    ½ cup chopped onion
    ¼ cup chopped green bell pepper
    1 (15-ounce) can cream-style corn
    1 egg or equivalent in egg substitute
    10 Ritz Reduced Fat Crackers, made into crumbs
    1/3 cup shredded Kraft reduced-fat Cheddar cheese

    Recipe



    Preheat oven to 350 degrees. Spray an 8-by-8-inch baking dish with butter-flavored cooking spray. In a large skillet sprayed with butter-flavored cooking spray, brown meat, onion,m and green pepper. Remove from heat. In a large bowl, combine corn, egg and cracker crumbs. Fold in meat mixture. Pour mixture into prepared baking dish. Evenly sprinkle Cheddar cheese over top. Bake for 30 minutes. Place baking dish on a wire rack and let set for 5 minutes. Divide into 6 servings.

    Hint: A self-seal sandwich bag works great for crushing crackers.

    Serves 6 – Each serving equals:
    148 Calories, 4 gm Fat, 10 gm Protein, 18 gm Carbohydrate, 75 mg Sodium, 63 mg Calcium, 1 gm Fiber
