List of Ingredients
8 ounces extra-lean ground sirloin beef or turkey breast
½ teaspoon JO's Sausage Seasoning
2 cups frozen loose-packed shredded hash brown potatoes
¾ cup finely chopped onion
4 eggs, or equivalent in egg substitute
¼ cup Land O Lakes Fat Free Half & Half
1/8 teaspoon black pepper
½ cup shredded Kraft reduced-fat Cheddar cheeseRecipe
In a large skillet sprayed with butter-flavored cooking spray, brown meat. Stir in JO's Sausage Seasoning. Drain, if necessary, and set aside. In same skillet, brown potatoes and onion. Add browned meat. Mix well to combine. In a medium bowl, combine eggs, half & half, and black pepper. Pour egg mixture over meat mixture. Sprinkle Cheddar cheese evenly over top. Cover and cook on low for 10 minutes.
HINTS: 1. 1/4 teaspoon poultry seasoning, 1/8 teaspoon ground sage and 1/8 teaspoon garlic powder may be used in place of JO's Sausage Seasoning.
2. Mr. Dell's frozen shredded potatoes are a good choice or raw shredded potatoes, rinsed and patted dry, may be used in place of frozen potatoes.
