    List of Ingredients




    16 ounces extra-lean ground sirloin beef or turkey breast
    2 cups reduced-sodium tomato juice
    1 teaspoon Worcestershire sauce
    3 ½ cups water
    1 teaspoon JO's Loose Meat Seasoning or any meat seasoning
    1 teaspoon dried parsley flakes
    1/8 teaspoon black pepper
    1 cup diced raw potatoes
    1 cup diced carrots
    1 cup diced celery
    ½ cup chopped onion
    2/3 cup uncooked Minute Rice

    Recipe



    In a large saucepan sprayed with butter-flavored cooking spray, brown meat. Stir in tomato juice, Worcestershire sauce, water, JO's Loose Meat Seasoning, parsley flakes, and black pepper. Bring mixture to a boil. Add potatoes, carrots, celery, onion, and uncooked instant rice. Mix well to combine. Lower heat, cover, and simmer for 40 to 45 minutes or until vegetables are tender, stirring occasionally.

    Serves 6 (1 1/4 cups) – Each serving equals:
    150 Calories, 2 gm Fat, 13 gm Protein, 20 gm Carbohydrate, 122 mg Sodium, 31 mg Calcium, 2 gm Fiber
    Diabetic Exchanges: 2 Meat, 1 Vegetable, 1 Starch
    Carb Choices: 1
