Bailey's Irish Cream Truffles

List of Ingredients
- 12 oz. semisweet chocolate chips
- 1/4 c. heavy cream
- 1 Tbsp. sweet butter
- 2 egg yolks
- 1/4 c. Bailey's Irish Cream
- Confectioner's sugar, chopped nuts, sprinkles, cocoa
Instructions
- Melt chocolate, Bailey's and heavy cream over very low heat or double boiler. Whisk in egg yolks, one at a time; mixture will thicken. Whisk in butter.
- Refrigerate overnight or until firm.
- With spoon, make small balls. Roll in your choice of powdered sugar, cocoa, chopped nuts, sprinkles, etc.
Final Comments
Yield depends on size of finished truffles.
