Beef Parmesan w/Garlic Angel Hair Pasta

List of Ingredients
- 1 1/2 lbs. beef cube steak
- 1 medium onion, sliced in rings
- 1 small green bell pepper, sliced into rings
- 1 c. Italian bread crumbs
- 1/2 c. grated Parmesan cheese
- 2 Tbsp. olive oil
- 1 (20 oz.) jar of your favorite marinara sauce
- 1/2 c. shredded mozzarella cheese
- 5 servings angel hair pasta
- 2 tsp. minced garlic
- Butter or margarine
Instructions
- Preheat oven to 350° F.
- Cut cube steak into serving size pieces. Coat meat with bread crumbs and parmesan cheese which have been mixed together.
- Heat olive oil in large frying pan and saute 1 tsp. of the garlic for 3 minutes. Quick fry (brown quickly on both sides) meat. Place meat in a casserole baking dish, slightly overlapping edges. Place onion rings and peppers on top of meat and pour marinara sauce over all.
- Bake for 30-45 minutes, depending on thickness of the meat. Sprinkle mozzarella over meat and leave in the oven until bubbly.
- Cook pasta al dente. Drain and toss with butter and 1 tsp. garlic. For a stronger garlic taste, season with garlic powder. Top with grated parmesan and parsley for color.
- Serve meat and sauce atop a mound of pasta.
Final Comments
NOTE: Make the meat ahead of time and refrigerate overnight; the acid in the tomato sauce will tenderize the meat even more. If you do this, save the mozzarella until the last minute. Makes 4 servings.
