Beef Tenderloin Deluxe

- 1 whole beef tenderloin, approximately 3 lbs.
- 4 Tbsp. butter, softened, divided
- 1/2 c. onion, chopped
- 4 Tbsp. soy sauce*
- 2 tsp. Dijon mustard
- 1/8 tsp. pepper
- 1 c. dry sherry
Instructions
- Spread tenderloin with 2 Tbsp. softened butter. Put on rack in shallow baking pan. Bake, uncovered, in preheated 400° oven for 20 minutes.
- Meanwhile, in 1 qt. saucepan, cook onions in 2 Tbsp. butter until tender. Add soy sauce, mustard, and pepper. Stir in sherry. Heat just to boiling and pour over tenderloin.
- Bake 20-25 minutes longer for rare beef. Use meat thermometer.
- Baste frequently with sauce. (If beef is thicker in the middle than the ends, slice 3 inches from each end to bake middle faster.) Serve sliced according to personal preference with sauce.
Final Comments
Schmitty's Notes: I tripled the sauce and added two packages of sliced fresh mushrooms. Also, I did not cut the meat; tied the thinner ends under the roast. Worked beautifully.
My Notes: I used lower sodium soy sauce, and it was still pretty salty; I would suggest cutting the amount of soy sauce to 2 Tbsp.
