Black Walnut Loaf Cake

List of Ingredients
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. shortening
- 1/2 c. chopped black walnuts
- 4 eggs, separated
- 1 1/4 c. sugar
- 1 tsp. almond extract
Instructions
- Grease bottom of a loaf pan and flour lightly.
- Measure flour, baking powder and salt into sifter. Cream shortening until soft in medium sized bowl. Sift and add dry ingredients. Blend in walnuts.
- Beat egg yolks in second medium sized bowl until thick and lemon colored. Stir in sugar and almond flavoring. Add to shortening and flour mixture.
- Beat egg whites until stiff but not dry; fold into egg-flour mixture.
- Pour into prepared loaf pan. Let stand at room temperature for 20 minutes to help prevent cracking of top during baking.
- Bake at 350 degrees for 1 hour or until cake tester inserted in the center comes out clean. Cool cake inpan for 5 minutes. Loosen around edges with knife. Turn onto cake rack and cool.
