    Black Walnut Loaf Cake

    List of Ingredients


    • 2 c. flour
    • 2 tsp. baking powder
    • 1/2 tsp. salt
    • 1 c. shortening
    • 1/2 c. chopped black walnuts
    • 4 eggs, separated
    • 1 1/4 c. sugar
    • 1 tsp. almond extract


    Instructions


    1. Grease bottom of a loaf pan and flour lightly.

    2. Measure flour, baking powder and salt into sifter. Cream shortening until soft in medium sized bowl. Sift and add dry ingredients. Blend in walnuts.

    3. Beat egg yolks in second medium sized bowl until thick and lemon colored. Stir in sugar and almond flavoring. Add to shortening and flour mixture.

    4. Beat egg whites until stiff but not dry; fold into egg-flour mixture.

    5. Pour into prepared loaf pan. Let stand at room temperature for 20 minutes to help prevent cracking of top during baking.

    6. Bake at 350 degrees for 1 hour or until cake tester inserted in the center comes out clean. Cool cake inpan for 5 minutes. Loosen around edges with knife. Turn onto cake rack and cool.
