Carrot Cake

List of Ingredients
- 1 1/2 c. vegetable oil
- 2 c. sugar
- 4 eggs
- 2 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 2 1/2 tsp. cinnamon
- 2 1/2 tsp. vanilla
- 3 c. carrots, grated
- CREAM CHEESE ICING:
- 1 stick (1/2 c.) butter, softened
- 8 oz. cream cheese, softened
- 3 1/2 c. powdered sugar
- Dash salt
- 1 tsp. vanilla
Instructions
- Combine oil, sugar and eggs thoroughly. Sift together dry ingredients and add to oil mixture; beat well. Add vanilla and carrots.
- Bake at 325 degrees in 3 greased layer pans for 45 minutes, or in a greased 10-inch tube pan for 1 hour and 15 minutes. Turn out of pan and cool. Frost with Cream Cheese Icing.
- Cream Cheese Icing: Combine all ingredients and beat until smooth. If necessary, add enough milk or cream to make spreadable.
Final Comments
This cake is quite oily. I have not tried cutting down the amount of oil, but I would think that it would be okay to do so.
