Cottage Potatoes

List of Ingredients
- 2 lb. unpeeled potatoes
- 1/2 c. onion, chopped
- 1 Tbsp. butter
- 1 c. bell pepper, chopped
- 1 tsp. paprika
- 1 tsp. Lawry's seasoned salt
- 1/2 tsp. black pepper
- Tabasco, to taste
- 3/4 c. Monterey Jack cheese, grated
- 3/4 c. Cheddar cheese, grated
Instructions
- Cut washed potatoes into 3/4-inch cubes; boil until soft. Preheat oven to 350 degrees.
- In skillet, saute onions in butter until translucent. Add bell pepper and saute until soft. Transfer to a bowl and mix with potatoes, paprika, seasoned salt, pepper, and several drops of Tabasco.
- Put mixture in greased 8" x 11" oven-proof dish and bake until potatoes begin to brown, about 20 minutes.
- Remove from oven and sprinkle with cheese. Return to oven briefly until cheese melts.
- Serves 8-10.
Final Comments
I cut recipe in half and put in 2-qt. casserole dish.
