Cranberry Orange Scones

List of Ingredients
- 2 c. flour
- 1 Tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 c. butter or margarine
- 2/3 c. non-fat plain yogurt
- 1/4 c. real egg substitute
- 1 c. Craisins (dried cranberries)
- 2 tsp. orange zest
- Sugar
Instructions
- Preheat oven to 425° F. Lightly spray cookie sheet with non-stick vegetable spray.
- Combine dry ingredients in a large mixing bowl. Work butter or margarine into dry ingredients until butter is the size of small peas using a pastry blender or fork. Add remaining ingredients except sugar, mixing just until dry ingredients are moist.
- Turn dough onto a lightly floured surface and gather into a ball. Spread dough into a 9-inch circle. Cut into 8 wedges. Place on cookie sheet. Sprinkle with sugar.
- Bake 15 to 18 minutes or until light golden brown. Makes 8 scones.
