    Microwave Peanut Brittle

    List of Ingredients


    • 1 c. sugar
    • 1/2 c. light corn syrup
    • 1 c. roasted, salted peanuts
    • 1 tsp. butter
    • 1 tsp. vanilla
    • 1 tsp. baking soda


    Instructions


    1. Combine sugar and syrup in 1 1/2 quart microwave-safe bowl. Microwave on HIGH for 4 minutes. Stir in peanuts. Cook 3-4 minutes on HIGH until light brown. Stir in butter; cook 1-1 1/2 minutes more. Add baking soda and vanilla; gently stir until light and foamy.

    2. Pour onto lightly greased cookie sheet. When just barely set, use 2 forks or well-greased fingers and pull until candy is almost transparent and thin. Makes 1 lb. candy.



    Final Comments


    Note: If raw peanuts are used, add before microwaving to the sugar-syrup mixture along with 1/8 tsp. salt.
