    Oatmeal Cake

    List of Ingredients


    • 1 1/2 c. boiling water
    • 1/2 c. butter
    • 1 1/4 c. oatmeal
    • 1 1/2 c. flour
    • 1 c. sugar
    • 1 c. brown sugar, firmly packed
    • 2 eggs
    • 2 tsp. vinegar
    • 1 tsp. salt
    • 1 tsp. cinnamon
    • 1 tsp. baking soda
    • * * *
    • FROSTING:
    • 3/4 c. brown sugar, firmly packed
    • 1/3 c. butter
    • 1/4 c. evaporated milk
    • 1 c. coconut


    Instructions


    1. In large bowl, pour boiling water over butter and oatmeal; let stand 20 minutes. Add remaining cake ingredients and mix well. Pour into greased and floured 9 x 13" pan. Bake at 350 degrees for 40 minutes. Frost while still hot.

    2. Prepare frosting: Mix all ingredients in saucepan and heat until butter melts.

    3. Spread frosting on hot cake. Place under broiler until golden brown.
