Oatmeal Cake

List of Ingredients
- 1 1/2 c. boiling water
- 1/2 c. butter
- 1 1/4 c. oatmeal
- 1 1/2 c. flour
- 1 c. sugar
- 1 c. brown sugar, firmly packed
- 2 eggs
- 2 tsp. vinegar
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking soda

- FROSTING:
- 3/4 c. brown sugar, firmly packed
- 1/3 c. butter
- 1/4 c. evaporated milk
- 1 c. coconut
Instructions
- In large bowl, pour boiling water over butter and oatmeal; let stand 20 minutes. Add remaining cake ingredients and mix well. Pour into greased and floured 9 x 13" pan. Bake at 350 degrees for 40 minutes. Frost while still hot.
- Prepare frosting: Mix all ingredients in saucepan and heat until butter melts.
- Spread frosting on hot cake. Place under broiler until golden brown.
