Oven Fried Snapper

List of Ingredients
- 2 lb. red shapper (or perch) fillets
- 1/2 c. oil
- 3 cloves garlic, pressed
- 1 tsp. salt
- 1 c. Parmesan cheese
- 1 c. dry bread crumbs
Instructions
- Rinse fish with cold water, pat dry with paper towels. Cut fish into six serving size portions.
- Combine oil, salt and garlic in oblong baking dish. Place fish in mixture and let marinate 10 minutes. Turn and let marinate another 10 minutes.
- Remove fish from marinade. Roll in cheese, then in crumbs; place on well-greased cookie sheet.
- Bake at 500° F for 12-15 minutes or until fish flakes easily when tested with fork.
