Pork Chop Spanish Rice

List of Ingredients
- 5 pork chops
- 2 Tbsp. cooking oil
- 1 tsp. salt
- 1/2 tsp. chili powder
- Dash pepper
- 3/4 c. uncooked long grain rice
- 1/2 c. onion, chopped
- 1/4 c. green bell pepper, chopped
- 28 oz. can diced tomatoes, with juice
- 5 green pepper rings
- 1/2 c. cheese, grated
Instructions
- Slowly brown pork chops in oil. Drain off excess fat.
- Combine salt, chili powder and pepper; sprinkle over meat. Add rice, onion and chopped green pepper. Pour tomatoes over.
- Cover and cook over low heat 35 minutes, stirring occasionally.
- Bring pork chops to top; place one green pepper ring over each pork chop and cook 5 minutes longer or until rice and meat are tender. Sprinkle with cheese.
- Serves 5.
