Pork Chop and Potato Scallop

- 6 pork chops
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 can mushroom soup
- 1/2 c. milk
- 1 onion, minced
- 2 Tbsp. parsley, chopped
- 4 c. potatoes, sliced
Instructions
- In skillet, brown pork chops. Remove and set aside.
- Blend soup, milk, parsley and onions together. Layer potatoes, salt and pepper in 2 qt. casserole dish. Pour soup mixture over potatoes; top with pork chops.
- Bake, covered at 375 degrees for 1 1/2 hours or until potatoes are tender and pork chops are done.
