Shrimp 'n Brown Rice

- 1 c. cooked brown rice
- 4 oz. cooked shrimp, coarsely chopped
- 4 oz. onions, chopped
- Dash cayenne pepper
- 2 eggs, beaten
- 1/2 c. chopped parsley
- 2 Tbsp. soy sauce
Instructions
- In non-stick skillet, heat rice over low heat, about 15 minutes. Add shrimp, onions and cayenne. Cook 1 minute, stirring constantly.
- Make a hollow in center of rice; pour eggs into hollow. Stir eggs until they begin to set, then mix eggs and rice. Add parsley and soy sauce. Stir to mix well.
- Makes 2 servings.
