    Shrimp Scampi

    List of Ingredients


    • 1 lb. jumbo shrimp, peeled and deveined
    • 2 Tbsp. olive oil
    • 2 Tbsp. butter*
    • 4 cloves garlic, minced
    • 2/3 c. white wine
    • 1/2 onion, minced
    • 3 Tbsp. fresh parsley, minced
    • 1/2 to 1 tsp. red pepper flakes (optional)
    • 8 oz. linguini, cooked


    Instructions


    1. Heat olive oil and butter (*use more if additional sauce is desired) in large skillet. Add garlic, onion and red pepper and saute until soft. Add shrimp and cook until firm, about 5 minutes. Remove shrimp.

    2. Add wine to skillet and bring to a simmer. Add parsley. Simmer gently a few minutes. Serve alone or tossed with cooked linguini.
