Shrimp Scampi

List of Ingredients
- 1 lb. jumbo shrimp, peeled and deveined
- 2 Tbsp. olive oil
- 2 Tbsp. butter*
- 4 cloves garlic, minced
- 2/3 c. white wine
- 1/2 onion, minced
- 3 Tbsp. fresh parsley, minced
- 1/2 to 1 tsp. red pepper flakes (optional)
- 8 oz. linguini, cooked
Instructions
- Heat olive oil and butter (*use more if additional sauce is desired) in large skillet. Add garlic, onion and red pepper and saute until soft. Add shrimp and cook until firm, about 5 minutes. Remove shrimp.
- Add wine to skillet and bring to a simmer. Add parsley. Simmer gently a few minutes. Serve alone or tossed with cooked linguini.
