Zesty Pork Chops

List of Ingredients
- 4 boneless porkchops, about 1-inch thick
- 1 Tbsp. vegetable oil
- 1 can (14.5 oz.) diced tomatoes in juice
- 1 lg. onion, coarsely chopped
- 1 clove garlic, minced
- 1 1/2 tsp. Italian seasoning
- 1/4 tsp. ground black pepper
- 1 green bell pepper, coarsely chopped
- Hot cooked spaghetti or other pasta
- Grated Parmesan cheese
Instructions
- Trim excess fat from chops. Heat oil in large skillet over medium-high heat. Add chops and cook until browned on both sides.
- Add tomatoes, onion, garlic, seasoning, and black pepper. Reduce heat to medium-low and cook for 20 minutes or until pork chops are nearly tender.
- Add green pepper; cook covered for 10 minutes or until chops are tender.
- Serve over hot cooked pasta; top with grated Parmesan cheese.
- Serves 4
Final Comments
I think this needs a touch of salt added just before serving.
