Harvest Pumpkin Bread with Orange Butter

List of Ingredients
- 1 tsp. baking soda
- 1/2 c. hot water
- 3/4 c. vegetable oil
- 3 c. sugar
- 2 c. canned pumpkin
- 4 eggs
- 1 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1 tsp. salt
- 3 1/2 c. all-purpose flour
- ORANGE BUTTER:
- 1/2 lb. butter, softened
- 1/2 box powdered sugar
- Grated rind of 2 oranges
- 2 Tbsp. orange juice concentrate
Instructions
- Preheat oven to 350°.
- Dissolve soda in hot water. Mix together oil, sugar and pumpkin, then add to soda mixture.
- Add eggs, cinnamon, cloves, salt and flour and mix until moistened.
- Pour batter into 2 greased and floured loaf pans. Bake for 1 hour. Remove from loaf pans and cool on wire racks.
- Prepare Orange Butter: Beat butter and sugar together.
- Add orange rind and juice concentrate and mix well. Place into decorative crock and serve with Pumpkin Bread.

Makes 2 loaves.
