Potato Rolls
List of Ingredients
- 1/2 c. mashed potatoes
- 1 pkg. active dry yeast
- 3/4 c. warm water
- 1/3 c. granulated sugar
- 1/3 c. shortening
- 1 egg, beaten
- 3/4 tsp. salt
- 3 to 3 1/4 c. all purpose flour
- 2 Tbsp. melted butter or margarine
Instructions
- Soften yeast in warm water.
- In large bowl, cream sugar and shortening; add potatoes, eggs and salt. Mix well.
- Add yeast and water mixture; gradually add flour to make stiff dough. Turn dough out onto floured surface and knead until smooth.
- Place dough in greased bowl, turning to grease top, cover with dishtowel and let rise until double, about 45 minutes to 1 hour.
- Punch down and shape into rolls of desired shape (regular, cloverleaf or crescent); place rolls in greased pan. Allow to raise again. Bake in 375 degree oven for 15-20 minutes. Brush tops with melted butter or margarine.
- Makes 1 dozen rolls.
