    Potato Rolls


    List of Ingredients


    • 1/2 c. mashed potatoes
    • 1 pkg. active dry yeast
    • 3/4 c. warm water
    • 1/3 c. granulated sugar
    • 1/3 c. shortening
    • 1 egg, beaten
    • 3/4 tsp. salt
    • 3 to 3 1/4 c. all purpose flour
    • 2 Tbsp. melted butter or margarine


    Instructions


    1. Soften yeast in warm water.
    2. In large bowl, cream sugar and shortening; add potatoes, eggs and salt. Mix well.
    3. Add yeast and water mixture; gradually add flour to make stiff dough. Turn dough out onto floured surface and knead until smooth.
    4. Place dough in greased bowl, turning to grease top, cover with dishtowel and let rise until double, about 45 minutes to 1 hour.
    5. Punch down and shape into rolls of desired shape (regular, cloverleaf or crescent); place rolls in greased pan. Allow to raise again. Bake in 375 degree oven for 15-20 minutes. Brush tops with melted butter or margarine.
    6. Makes 1 dozen rolls.
