Chicken Rice Casserole

2 c cubed cooked chicken
2 c cooked rice
1 can condensed cream of chicken soup, undiluted
1 can (8 oz) sliced water chestnuts, drained
1 can (4 oz) sliced mushrooms, drained
2 celery ribs, thinly sliced
¾ c mayonnaise (do not use reduced-fat or fat-free)
1 Tbsp chopped onion
1 Tbsp lemon juice
½ tsp salt
1/3 c crushed saltines (about 10 crackers)
1 Tbsp butter or margarine, meltedRecipe
Heat oven to 350°
In a bowl, combine the first 10 ingredients; transfer to a greased 2½-qt baking dish. Combine cracker crumbs and butter; sprinkle over top.
Bake, uncovered, for 30-35 minutes or until bubbly.
Yield: 4-6 servings
