Meat and Potato Casserole

3 to 4 c thinly sliced, peeled potatoes
2 Tbsp butter or margarine, melted
½ tsp salt
1 lb ground beef
1 pkg (10 oz) frozen corn, thawed
1 can (10-¾ Oz) condensed cream of celery soup, undiluted
1 c (4 oz) shredded cheddar cheese, divided
1/3 c milk
1 Tbsp chopped onion
¼ tsp garlic powder
1/8 tsp pepper
Minced fresh parsley, optionalRecipe
Heat oven to 400°
Toss potatoes with butter and salt; arrange on the bottom and up the sides of a greased 11-in x 7-in x 2-in baking dish. Bake, uncovered for 25-30 minutes or until potatoes are almost tender.
Meanwhile, in a skillet, cook beef over medium heat until no longer pink; drain. Spoon beef and corn over potatoes. Combine the soup, ½ c of cheese, milk, onion, garlic powder and pepper; pour over beef mixture.
Bake, uncovered, for 20 minutes or until vegetables are tender. Sprinkle with remaining cheese; bake 2-3 minutes longer or until cheese is melted. Sprinkle with parsley, if desired.
Yield: 6 servings.
