Peanut Cookies

Recipe Introduction
My mother used to make these cookies on a regular basis. The recipe calls for lard, which must be used in order to reproduce the original taste.
List of Ingredients
- 1/2 c. melted lard (no substitutes)
- 1 c. brown sugar
- 1 egg
- 1/2 c. buttermilk
- 1 tsp. vanilla
- 1 c. chopped peanuts*
- 2 c. flour*
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 2 tsp. baking powder
Instructions
- In bowl, stir lard and sugar together; add egg and vanilla. Beat well. Add buttermilk and dry ingredients, alternately; add nuts.
- Drop by spoonsfuls onto greased cookie sheet. Bake about 8 minutes at 425 degrees.
Final Comments
NOTE: Recipe does not specify salted or unsalted peanuts. I add about 1/2 c. additional flour to give more body to the dough for a thicker cookie.
