Adapted from a recipe in the Beary Good Recipes cookbook. Proceeds from this cookbook go to benefit the "Shop-With-A-Cop" program in Orem, Utah
List of Ingredients
2¾ c sugar
¾ c margarine
1 egg
3¾-4 c all-purpose flour
1½ tsp baking soda
1½ tsp baking powder
1½ tsp cinnamon
¾ tsp salt
1½ c canned pumpkin
1½ tsp vanilla
1½ c chocolate chips or raisins
1½ c chopped nuts (optional)
(My adaptions are to also add ½ tsp cloves and ½ tsp ginger)Recipe
Heat oven to 350°
Cream sugar, margarine and eggs together. Stir dry ingredients together and add alternately with pumpkin and vanilla, mixing well.
Stir in chocolate chips or raisins and nuts, if using.
Drop by tablespoonfuls onto greased cookie sheet. Bake for 12-15 minutes.
