Shortbread Cookies

1 c white sugar
2 c cornstarch
4 c flour
Pinch salt
1 lb butter, softened (do not substitute)
1 Tbsp white sugar
Finely chopped pecans, if desiredRecipe
Heat oven to 325°
Add 1 cup sugar, cornstarch, flour and salt to large bowl; cut in butter. Add pecans, if using. Mixture should have a sand-like texture.
Spread dough into an 18-in x 12-in x 1-in pan. Press down firmly. Prick evenly every 1" with fork.
Bake 40 minutes. Sprinkle 1 Tbasp sugar evenly over cookie. Cool 10 minutes then cut into squares. Let cool completely on cookie sheet.
