    1 c (2 sticks) butter, softened
    1 c firmly packed light brown sugar
    1 egg
    1 c vegetable oil
    1 tsp vanilla extract
    3½ c all-purpose flour
    1 tsp baking soda
    1 tsp salt
    1 c rolled oats
    1 c crushed corn flakes
    1 c shredded coconut
    ½ c chopped pecans
    1 c granulated sugar

    Recipe



    Heat oven to 325°

    Cream butter and brown sugar; add egg, oil, and vanilla.

    In separate bowl, mix flour with baking soda and salt; add to the creamed mixture with the oats, corn flakes, coconut, and pecans. Mix well at medium speed.

    Roll the dough into walnut-size balls or use a small scoop, and put the balls on an ungreased baking sheet 1½ inches apart. Flatten slightly with fork.

    Bake for 12 minutes (cookies will still be light in color). Remove from oven. Sprinkle tops with granulated sugar. Allow to cool on baking sheet for 5 minutes, then remove to wire rack.

    Makes about 60 cookies.
