Easy Blueberry Cobbler

- 3 c. fresh blueberries
- 1 Tbsp. lemon juice
- 1 egg, beaten
- 1 c. flour
- 1 c. sugar
- 6 Tbsp. butter, melted
Instructions
- Preheat oven to 375 degrees.
- Lightly grease a 6x10x2" baking dish (or 8" square or 2 qt. casserole may be used)
- Wash blueberries; place in baking dish. Sprinkle lemon juice over berries.
- Combine egg, flour and sugar until crumbly. Spread over blueberries. Drizzle melted butter over topping.
- Bake for 30 minutes.
Final Comments
Coat blueberries with 1 Tbsp. flour or cornstarch before sprinkling on lemon juice to thicken sauce. Double crust ingredients.
