- 2 Tbsp. butter or margarine
- 2 eggs
- 2 - 16 oz. cans chili with beans
- 1 - 16 oz. can hominy, drained
- 1 - 16 oz. pkg. Velveeta Mexican-style cheese
Instructions
- In saucepan, melt butter or margarine. Scramble eggs in pan. Add chili and drained hominy. Simmer 20 minutes. Cut cheese into cubes; add to chili mixture a little at a time and stir until melted. Serve warm with Fritos or tortilla chips.
Final Comments
Either mild or spicy cheese may be used. I transfer to crockpot to keep warm.
