    Recipe Introduction


    This is by far the easiest and best Spanish Rice I have made.


    List of Ingredients


    • 2 Tbsp. cooking oil
    • 2 Tbsp. minced onion
    • 1 1/2 c. uncooked white rice
    • 2 c. chicken or beef broth
    • 1 c. chunky salsa


    Instructions


    1. Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.

    2. Mix rice into skillet, stirring often. When rice begins to brown, stir in broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
