    Fried Rice

    Adapted from recipe posted by bill on Mimi's Recipe Board


    List of Ingredients


    • 2 c. cold cooked long-grain rice
    • 3 eggs
    • 1/4 c. vegetable or olive oil
    • 1/2 onion OR 1 bunch green onions, chopped
    • 2 cloves garlic, minced
    • 1/2 c. frozen (mixed) peas & carrots
    • 1/2 c. ham, cooked shrimp, cooked chicken
    • 2 Tbsp. soy sauce


    Instructions


    1. Loosen rice by rubbing it between your hands to separate.

    2. Lightly beat eggs. Heat 1 Tbsp. of oil in a wide frying pan or wok over medium heat. Add egg and cook, stirring until soft curds form. Remove from pan and set aside.

    3. Increase heat to medium-high and add 1 Tbsp. more oil to pan. Add onion, garlic, peas & carrots, and desired meat. Cook, stirring continually until heated through (about 2 minutes). Remove from pan and set aside.

    4. Heat remaining 2 Tbsp. oil in pan. Add rice and cook, stirring, until heated through (about 2 minutes), add meat mixture and soy sauce. Add eggs and stir gently until eggs are all broken into little pieces. Serve hot.

    5. Makes approximately 4 servings.
