    Shrimp 'n Brown Rice

    This is an OLD Weight Watcher's recipe.


    List of Ingredients


    • 1 c. cooked brown rice
    • 4 oz. cooked shrimp, coarsely chopped
    • 4 oz. onions, chopped
    • Dash cayenne pepper
    • 2 eggs, beaten
    • 1/2 c. chopped parsley
    • 2 Tbsp. soy sauce


    Instructions


    1. In non-stick skillet, heat rice over low heat, about 15 minutes. Add shrimp, onions and cayenne. Cook 1 minute, stirring constantly.
    2. Make a hollow in center of rice; pour eggs into hollow. Stir eggs until they begin to set, then mix eggs and rice. Add parsley and soy sauce. Stir to mix well.
    3. Makes 2 servings.
