Chicken a la King
List of Ingredients
- 2 c. cooked chicken
- 2 Tbsp. shortening
- 1/4 c. onion, chopped
- 1/4 c. green bell pepper, chopped
- 1/4 c. celery, chopped
- 1/4 c. mushrooms, sliced
- Dash each salt and pepper
- 1 Tbsp. butter
- 1 Tbsp. flour
- 1 1/2 c. milk
- 2 Tbsp. pimento, shopped
- 1 Tbsp. fresh or 1 tsp. dried parsley
Instructions
- In large skillet, melt shortening and saute onion, pepper, celery and mushrooms until tender. Remove from pan.
- Melt butter in pan and add flour to make a paste; gradually add milk and cook, stirring constantly until mixture thickens. Add salt and pepper.
- Add chicken, sauteed vegetables, pimento, and parsley. Reduce heat and heat through. Serve over rice.
