    Chicken with Herb Spaghetti

    List of Ingredients


    • 1/4 lb. (1 stick) butter or margarine, melted
    • 1/2 c. parsley sprigs
    • 2 cloves garlic, halved
    • Salt, to taste
    • 1/8 tsp. pepper
    • 1 tsp. basil leaves
    • 1/2 tsp. oregano leaves
    • 2 Tbsp. oil
    • 1 Tbsp. lemon juice
    • 2 lb. chicken pieces
    • 8 oz. uncooked spaghetti
    • Parsley sprigs for garnish


    Instructions


    1. Place butter, parsley, garlic, and spices in blender or food processor. Blend at high speed until parsley is finely chopped. Set aside 3 Tbsp. of herb butter mixture for chicken and use the rest for the spaghetti.
    2. Using fork, beat together oil and lemon juice. Brush chicken with mixture and sprinkle with salt and pepper.
    3. Broil about 8 inches from heat. Turn after 20 minutes and broil an additional 25 minutes. Brush both sides with herb butter mixture during last 4 minutes of cooking.
    4. Prepare spaghetti according to package directions, 15 minutes before chicken is done. Place on warm serving platter and toss with remaining herb butter mixture.
    5. Place chicken around edge of platter; garnish with parsley sprigs.
    6. Serves 4-6.
