Kickin' Chicken Chipotle

List of Ingredients
- 6 boneless, skinless chicken breast halves
- 6 strips bacon
- 2 c. (1 pint) heavy cream
- 2 chipotle peppers, seeded and chopped (canned or fresh)
- 2 Tbsp. butter
- 1 tsp. cornstarch
- Salt to taste
Instructions
- Preheat oven to 350 degrees.
- Wrap each chicken with a strip of bacon and saute in butter for one minute per side. Set in a glass, ovenproof pan, and cook in oven for 20 minutes. Remove the chicken from pan and drain of excess grease. Replace chicken in baking pan.
- In small mixing bowl, combine cream, chipotle peppers, cornstarch, and salt. Pour mixture over chicken breasts and return to oven for another 10-20 minutes or until the sauce is thickened and breasts are cooked through. Serve with rice. Serves 6.

Jacqui's note: I actually serve this over fettucine with spinach as a side dish.
