    List of Ingredients


    • 6 boneless, skinless chicken breast halves
    • 6 strips bacon
    • 2 c. (1 pint) heavy cream
    • 2 chipotle peppers, seeded and chopped (canned or fresh)
    • 2 Tbsp. butter
    • 1 tsp. cornstarch
    • Salt to taste


    Instructions


    1. Preheat oven to 350 degrees.
    2. Wrap each chicken with a strip of bacon and saute in butter for one minute per side. Set in a glass, ovenproof pan, and cook in oven for 20 minutes. Remove the chicken from pan and drain of excess grease. Replace chicken in baking pan.
    3. In small mixing bowl, combine cream, chipotle peppers, cornstarch, and salt. Pour mixture over chicken breasts and return to oven for another 10-20 minutes or until the sauce is thickened and breasts are cooked through. Serve with rice. Serves 6.

    Jacqui's note: I actually serve this over fettucine with spinach as a side dish.
