    No-Fuss Snack Mix Chicken

    List of Ingredients


    • 1 c. butter, melted
    • 4 c. Pretzel Snack Mix, crushed
    • 5 to 5 1/2 lb. meaty chicken pieces OR
    • 6 skinless, boneless breast halves (about 2 1/2 lb.)


    Instructions


    1. Preheat oven to 375° F. Line a 15x10x1-inch baking pan with aluminum foil. Set aside
    2. Place melted butter in shallow dish or pie plate. In another shallow dish or on waxed paper, place crushed snack mix.
    3. Remove skin from meaty chicken pieces. Dip chicken in butter to coat, then dip in snack mix to coat evenly. Place chicken in prepared pan.
    4. Bake until chicken is no longer pink (170° F for breasts; 180° F for thighs and drumsticks). Allow 50 to 60 minutes for meaty chicken pieces or 30 minutes for skinless boneless breast halves.


    Final Comments


    When we made this, my DIL couldn't find the kind of snack mix she thought she should use (Chex Mix), so she used Cheez-it Snack Mix. It was an excellent substitute. We haven't tried it with Chex Mix yet.
