Parmesan Chicken

Adapted from an old Weight Watchers recipe
List of Ingredients
- 4 Tbsp. buttermilk
- 1 oz. Parmesan cheese, grated
- 2 chicken breasts, boned and skinned
- 2 tsp. flour
- 1/4 tsp. salt
- Dash each garlic powder, onion powder and pepper
- 6 Tbsp. dry bread crumbs
- 4 tsp. cooking oil
Instructions
- In small bowl, combine milk and cheese.
- Pound chicken breasts to 1/4 inch thickness; sprinkle with flour and seasonings, then dip into buttermilk mixture, coating both sides and using entire mixture.
- On sheet of waxed paper or on a plate, dip chicken into bread crumbs, turning to coat both sides.
- In non-stick skillet, heat oil. Add chicken and cook, turning once, until browned.
- Makes 2 servings.
