Fried Rice

List of Ingredients
- 2 c. cold cooked long-grain rice
- 3 eggs
- 1/4 c. vegetable or olive oil
- 1/2 onion OR 1 bunch green onions, chopped
- 2 cloves garlic, minced
- 1/2 c. frozen (mixed) peas & carrots
- 1/2 c. ham, cooked shrimp, cooked chicken
- 2 Tbsp. soy sauce
Instructions
- Loosen rice by rubbing it between your hands to separate.
- Lightly beat eggs. Heat 1 Tbsp. of oil in a wide frying pan or wok over medium heat. Add egg and cook, stirring until soft curds form. Remove from pan and set aside.
- Increase heat to medium-high and add 1 Tbsp. more oil to pan. Add onion, garlic, peas & carrots, and desired meat. Cook, stirring continually until heated through (about 2 minutes). Remove from pan and set aside.
- Heat remaining 2 Tbsp. oil in pan. Add rice and cook, stirring, until heated through (about 2 minutes), add meat mixture and soy sauce. Add eggs and stir gently until eggs are all broken into little pieces. Serve hot.
- Makes approximately 4 servings.
