6 medium zucchini
1-2 garlic cloves, pressed
1 tsp olive oil
Salt & pepper, to taste
20 grape tomatoes, halved
½ c fontina or mozzarella cheese
¼ c Parmesan cheese
Extra olive oil for drizzling
Fresh basil leaves, sliced thin for garnishRecipe
Preheat oven to 350°.
Cut zucchini in half lengthwise and trim a little off the bottom so it sits flat in a baking dish. Scoop out the center where the seeds are with a spoon.
Brush the surface with a mixture of crushed garlic, olive oil, salt, and pepper.
Arrange tomato halves into the grooves and bake for about 30 minutes.
Remove and place diced cheese between the tomatoes; place back in the oven, but now UNDER BROILER until golden and bubbly. Remove from oven and drizzle with olive oil, a sprinkling of grated Parmesan and top with some fresh basil slivers.
