Split Pea Soup
List of Ingredients
- 2 c. (1 lb.) dry split peas
- 2 qts. water
- 1 ham bone
- 1 c. celery, minced
- 1/2 c. onion, finely chopped
- 1 sprig parsley
- 1/4 tsp. pepper
Instructions
- Heat peas and water to boiling; boil gently for 2 minutes. Remove from heat; cover and let stand 1 hour.
- Add remaining ingredients to peas. Heat to boiling. Reduce heat and simmer, covered, 2 1/2 to 3 hours until peas are very soft.
- Remove bone; trim meat and add to soup. If desired, thin with milk or water. Additional ham may be added, if desired. Season to taste.
