    Bacon and Mushroom Rollups

    Bacon & Mushroom Roll-Ups
    Makes 12 whole roll-ups or 24 appetizer servings

    4 slices lean bacon, diced
    ½ lb. mushrooms chopped
    1 medium onion chopped
    ½ t. salt
    1/8 t. pepper
    1 3oz. pkg. cream cheese, room temperature
    12 slices sandwich bread
    ¼ c. butter melted

    In a large skillet, saute bacon, mushrooms, onion, salt and pepper 5 to 8 minutes. Bacon will not be crisp. Stir in cream cheese; set aside. Cut crusts from bread. With a rolling pin, flatten each trimmed slice of bread until ¼ inch thick. Spread about 2 tablespoons mushroom mixture evenly over each flattened bread slice. With filling side up roll jelly- roll fashion. Secure with a toothick if necessary. Refrigerate at least 1 hour. Preheat oven to 375º. Arrange roll-ups on an ungreased baking sheet; brush each with melted butter. Bake 10 to 15 minutes until lightly browned. Leave roll-ups whole or cut in half. Serve warm.
