    Cheese Spinach Triangles

    1 (6 oz.) pkg. frozen chopped spinach, thawed and drained well
    2 large eggs, beaten
    1 (8 oz.) pkg. cream cheese
    1 lb. Feta cheese
    1 lb. filo dough
    2 sticks butter, melted
    2 tsp. crushed dried mint

    Care for filo dough: Unfold package of dough and place
    on waxed paper. Cover with more waxed paper and damp towel to prevent filo dough from drying and cracking.

    Beat eggs with electric mixer until fluffy. Add cream
    cheese and continue beating until well blended. Remove bowl
    from mixer. Crumble Feta cheese with fork and combine with egg
    mixture. Add chopped spinach and mint and stir well.

    Cut filo dough, 6 x 12-inch. Take one filo layer at a
    time and brush with melted butter. Fold it over to make a
    strip about 3-inches in width. Brush with butter.

    Place 1 teaspoon cheese mixture at one end of each
    strip, folding strip diagonally until triangles are formed.
    Brush tops with melted butter. Place on ungreased baking sheet
    and bake at 375 degrees for 10 to 15 minutes, or until golden brown.

    Makes 40 triangles.

    Note: To freeze, place unbaked buttered triangles in
    plastic container, separating layers with wax paper and freeze.
    When ready to serve, place frozen triangles on ungreased pan
    and bake. May be frozen for at least 2 months.
