Shelley's White Chili

Makes 8 bowls
1 T. oil
1 medium onion, chopped
1 clove garlic, minced
1 t. ground cumin
2 chicken flavored boullion cubes
1 15oz. can white kindey beans (cannellini) drained
1 12oz. can white corn, drained
2 4½ oz. cans chopped greeen chilies
1 lb. boneless chicken breast cut into 1 inch cubes
1½cups water.
dash or 2 of hot pepper sauce
1 c. Monterey Jack cheese
Saute onion, garlic and cumin in oil over medium heat till tender. Put in large saucepan with rest of ingredients, (except for hot pepper sauce and cheese). Simmer for 50 to 60 minutes or until chicken is tender. Add dash or 2 of hot pepper sauce (or to your taste).
Serve garnished with cheese.
**even better next day, freezes well**
