    Velvet Crumb Cake

    Bisquick site (Mom's recipe from her box)
    1/2 cups Bisquick
    1/2 cup sugar
    1/2 cup milk or water
    2 tablespoons shortening
    1 teaspoon vanilla
    1 egg
    Crumb Topping (below)

    1. Heat oven to 350ºF. Grease and flour 8-inch square pan
    or 9-inch round pan.

    2. Beat all ingredients except crumb topping in large bowl
    on low speed 30 seconds, scraping bowl constantly. Beat on
    medium speed 4 minutes, scraping bowl occasionally. Pour
    into pan.

    3. Bake 30 to 35 minutes or until toothpick inserted in
    center comes out clean; cool slightly.

    4. Make Crumb Topping; spread over cake. Set oven control
    to Broil. Broil about 3 inches from heat about 3 minutes
    or until golden brown.

    Makes 8 servings

    Crumb Topping

    1/2 cup flaked coconut
    1/3 cup packed brown sugar
    1/4 cup chopped nuts
    3 tablespoons butter or margarine, softened
    2 tablespoons milk

    Stir together all ingredients.

    Mom used to make this all the time. Love the topping.
