Hearty Fresh Tomato Salsa

List of Ingredients
- 4 lbs. tomatoes, peeled, seeded and chopped (6 cups)
- � t. salt
- 1 c. fresh corn kernels (about 2 ears)
- 1 c. minced fresh cilantro
- 1/4 c. finely chopped Vidalia or other sweet onion
- 1/4 c. finely chopped red onion
- 2 t. sugar
- 1/4 t. freshly ground black pepper
- 3 T. fresh lime juice
- 3 jalapeno peppers, seeded and chopped
- 2 garlic cloves, minced
- 1 15 ounce can black beans, rinsed and drained
- 1 (7 oz..) can chipotle chiles in adobo sauce
Instructions
- Place tomatoes in a colander; sprinkle with salt. Toss gently; drain 30 minutes. Combine tomato mixture, cor, and the next 9 ingredients (through beans) in a large bowl. Remove 1 chipotle chile from can, finely chop. Add chile and 8 teaspoons adobo sauc to corn mixture, stirring to combine.
