Fresh Marinara Linguine

• 4 teaspoons olive oil
• 1 cup finely chopped sweet Vidalia onions
• 4 cloves garlic, minced (not crushed)
• 10 medium tomatoes (about 5 cups) cut into 1 inch chunks
• 3 tablespoons tomato paste
• 12 ounces uncooked linguine
• 2 tablespoons chopped fresh basil
• 3/4 teaspoon salt
Heat nonstick Dutch oven over medium high heat until hot. Add 1 teaspoon of the oil. Add onions and cook 5 minutes until tender.
Add garlic and cook, stirring constantly for 15 seconds. Add tomatoes and tomato paste. Mix well. Bring to a boil, reduce heat and simmer for 15 minutes, stirring occasionally.
In the meantime, cook linguine and drain. Place on large serving dish. Remove sauce from heat and stir in fresh basil and remaining olive oil. Pour sauce over linguine.
