    Buttermilk Fried Chicken Coating Recipe

    3 Tbsp. flour
    1-1/2 tsp. lemon pepper
    1/3 cup buttermilk
    1/2 cup cornflake crumbs
    3 Tbsp. cornmeal
    2 Tbsp. melted butter


    Combine flour and lemon pepper seasoning in shallow dish. Place buttermilk in another dish. In third dish, mix cornflake crumbs and cornmeal. Dip boneless, skinless chicken in flour mixture, then dip in buttermilk, and finally in crumb mixture. Then drizzle with melted butter and bake.

    Herbed Mustard Coating Recipe

    2 Tbsp. dijon mustard
    2 Tbsp. italian salad dressing
    1/2 cup soft bread crumbs
    2 Tbsp. chopped fresh parsley
    1 tsp. dried thyme
    2 Tbsp. melted butter


    Combine mustard and salad dressing in shallow dish. Mix bread crumbs, parsley and thyme in another dish. Toss with melted butter to mix well.

    Spread mustard mixture on both sides of boneless, skinless chicken breasts, then pat crumb mixture onto both sides, pressing firmly. Bake as directed above.

    Ranch Chicken Recipe

    1/3 cup purchased dried bread crumbs
    1 0.4 oz. pkg. buttermilk ranch salad dressing mix
    1/3 cup light sour cream


    Combine bread crumbs and salad dressing mix in shallow dish. Place sour cream in another dish. Dip boneless, skinless chicken breasts in sour cream to coat well. Roll coated chicken in bread crumbs, pressing to coat. Place on cookie sheet and bake as directed above.

    Chicken Almondine Coating Recipe

    1/3 cup butter, melted
    1/4 cup apple juice
    1/4 cup flour
    2/3 cup ground almonds
    1/4 tsp. garlic powder
    1/2 tsp. curry powder
    1/8 tsp. pepper


    In shallow pan, combine melted butter with apple juice. In another shallow pan combine flour, ground almonds, and spices, mix well. Dip boneless, skinless chicken breasts into melted butter mixture, then roll in flour mixture to coat. Place in greased baking pan and bake as directed above.

    Pretzel Chicken Coating Recipe

    1/4 cup butter, melted
    2 Tbsp. prepared horseradish or mustard, as desired
    1/8 tsp. hot pepper sauce, if desired
    1 cup crushed pretzel sticks
    2 Tbsp. flour
    2 Tbsp. chopped parsley


    Combine butter, horseradish or mustard, and hot pepper sauce in shallow pan. Mix crushed pretzels, flour and parsley in another dish. Dip boneless, skinless chicken breasts into butter mixture, then roll in crushed pretzel mixture to coat. Bake as directed above.

    Honey-Nut Chicken Coating Recipe

    1/4 cup butter, melted
    2 Tbsp. honey
    1/2 cup chopped salted peanuts
    1/2 cup crushed cornflakes
    1/2 tsp. thyme leaves
    1/4 tsp. salt


    Combine butter and honey in shallow pan and mix well. Combine remaining ingredients in another pan. Dip boneless, skinless chicken breasts in butter mixture, then roll in crumb mixture to coat. Bake as directed above.
